Pick all vegetables when young. Not only will they taste better but the plants will bear more.

Specific harvesting tips: pick corn when silks are brown; cucumbers are best when slender and dark green; parsnips and carrots taste better after a sharp frost; tomatoes taste best when dead ripe according to old timers. All root crops should be picked in the morning, and all above ground crops in the afternoon or early evening.
