This recipe is for a delicious elegant biscuit called Popoversa popover. It is easy to make, uses few ingredients, looks great and tastes delicious. This recipe comes to me from my Nana who showed me how to make it when I was just a young girl. In those days she used lard for greasing the popover pans, today I use Crisco.

POPOVERS

4 fresh large eggs
2 cups whole milk
2 cups all-purpose flour
1 teaspoon salt

Heat oven to 450 degrees. GreasePopovers popover pans (which can be found in any good kitchen appliance store) or l2 deep custard cups or even l6 medium muffin pans. With a hand beater, beat eggs slightly. Add milk, flour and salt. Beat just until smooth (do not overbeat). Fill cups half full or the muffin pans three quarters full. Bake 25 minutes, lower oven temperature to 350 degrees and bake l5 to 20 minutes longer, or until golden brown. Remove immediately from pan.

It is important that during the Popoversbaking time you do not open the oven; not until the last five minutes to check the color, or you will have a flat biscuit instead of a 5 inch tall popover.
