I
always knew I would find something good to eat at my best friend's house.
Everyone congregated there and her mom would always say 'stay, there's
plenty!" She always kept elbow macaroni, sliced American cheese and
tomato soup in the house. Out would come her
big
dented pot and in would go salted
water which she would bring to a boil. Two boxes of elbows would get
cooked
until tender and
then drained (not dry). A quarter pound of butter would be melted in
and about ten slices of cheese. Add two can of tomato soup and two
cups of milk. Stir and
simmer
until cheese has melted. Liberally sprinkle with pepper. Fills the
stomachs of plenty of kids and its simple, cheap and nutritional. It
never fails to bring back many happy memories of my growing up years and
my 'second" mother Freida Goldberg.
