I want
to give you a recipe for my mother's corn chowder. I grew
up in the Depression years and my mother was always looking for filling,
inexpensive one-dish meals that could feed a family. This recipe is
simple, hearty and delicious and my popovers go very well with it.
Flo's Corn Chowder
6 potatoes, diced
l small onion, diced
4 tablespoons butter
l can creamed corn
6 cups whole milk
Boil diced potatoes in salted water until fork tender. Drain and set
aside. In a small frying pan lightly brown diced onion in 4 tablespoons
butter. Add to potatoes along with your canned corn and milk. Sprinkle in
salt and pepper to your own taste. Bring soup almost to a boil and then
simmer for l0 minutes.
