When my children were young my husband used to make them breakfast on the
weekend One day they said no to pancakes, no to French toast, no to
cereal, no to just about everything. "Please daddy, make something
different. So he invented this dish that he called "egg in the hole in the
bread." The kids loved it and he made it many times over the years
thinking, as we all did, that it was his own invention. One day long after
all the children were married, we came upon a recipe for "Hobo Egg". It
was exactly the same thing, In fact, I have seen it on a cooking show on
television and there it was called "Egg in a Nest." As far as my family is
concerned, however, their father is the inventor of their breakfast
surprise, which they now make for their own children.
Take as many slices of fresh white bread as you need, depending on how
many people you are feeding and how many eggs they can eat. Take a juice
glass and cut a round hole out of the center of the bread and put aside.
Heat a skillet with butter, place the bread in it and brown the bread a
little. Break an egg into the center and shake a little salt and pepper on
it. After the egg starts to cook, place a pat of butter on top and flip
over and brown on the other side for a minute or two. Voila! Eggs and
toast at the same time. Serve with bacon or sausages, a glass of juice and
you'll have a great breakfast.
