In the the month of July the first blueberries come
into the
stores or in the farm stands if you are lucky enough to be close to any as
I am. There is nothing like eating fresh blueberry muffins right out of
the oven. This is a very simple recipe. Try it - children especially
like them.
Blueberry Muffins
½ cup butter, softened
1 cup sugar
2 large eggs
1 tsp. vanilla
2 tsps. baking powder
¼ tsp. salt
2 ½ cups blueberries
2 cups flour
½ cup milk
Grease 12 regular muffin cups, including the area between each cup. The
abundance of berries in these muffins causes them to stick, so grease
well. Beat the butter in a medium size bowl until creamy. Add the sugar
and beat until well incorporated. Beat in eggs one at a time. Add
vanilla, baking powder and salt. Mix well. Mash - cup of blueberries and
stir into batter. Fold in half the flour then half the milk. Repeat.
Add remaining berries. Spoon the batter into muffin cups and bake in a
375 degree oven until muffins pop up and brown. Approx. 25 to 30 minutes.
